Method
- Marinate the chicken in the buttermilk for 8+ hours, preferably overnight
- When ready mix all the dried ingredients to create the rub, and dredge the chicken in it
- Dust off any excess rub, then shallow fry, skin side down, on a gentle heat for 10 minutes or so
- Flip the chicken and fry for another 10 minutes to crisp up the other side
- Transfer to a medium oven (or BBQ) and cook through for another 15 minutes
- Serve in a bowl or special basket, along with a side of coleslaw
